I originally planned to go all out and put on a football worthy spread for Super Bowl Sunday, but schedules were off today so instead of instead of getting fancy, the hubby picked up some veggie snack trays and a chocolate covered strawberry for me. I added mini veggie corndogs with mustard, icy Diet Coke, and a popcorn snack mix.
I originally planned for a savory popcorn snack with one of my favorite spices, Herbs de Provence, chopped fresh garlic, and butter. Unfortunately, when I went shopping at Walgreens for snacks and supplies, I wasn’t able to find plain popcorn. So I had to think fast and come up with plan B. I knew I wanted popped popcorn for the base because it’s high in fiber, gives lots of chew time, and is low in calories compared to denser snack foods. But what to do?
I picked out Orville Redenbacher’s Butter Microwave Popcorn and to that I added a mixed snack mix with pretzels and garlic chips. I added Kettle Corn for a splash of sweetness and finished it with smokehouse almonds for a deep smokiness. This snack was super simple – I popped the popcorn and mixed in the other goodies while the popcorn was hot so the flavors blended.
Curious about what I had planned? Here’s my Herbs de Provence Savory Popcorn recipe: Take 4 cups popped Orville Redenbacher’s plain popcorn (no salt or butter -air popped or microwave). Melt 4 T butter (real butter is best ), 1/2 garlic clove (minced), 1 T Herbs de Provence (available in the seasoning aisle – includes lovely spices and lavender). To make, melt the butter while the popcorn is popping. Add the garlic and cook for about 1 minute. Stir in seasoning. Put the popcorn in a very large bowl or bag that can be sealed. Sprinkle in flavored butter, toss to coat. Serve immediately with a nice Diet Coke, Coke, or glass of wine.
While it’s not the snack I planned, the mixed-up popcorn worked out fabulously and was delicious. I finished it off with two icy glasses of Diet Coke and we had an intimate little party for two while we watched the second half. It wasn’t the bigger shindig I thought we’d have, but it was really sweet and romantic. I don’t get to see him enough and if watching a couple of hours of football gives us time to hold hands and smack talk about the football players and enjoy some Madonna together, then I’ll start watching football every Sunday.
