I know I’m in the minority, but the green bean casseroles that many families love at Thanksgiving are disgusting to me. Luckily, since I became a vegetarian I can just claim I won’t eat them instead of I don’t like them. People get offended when you turn down their beans – seriously! But since the vast majority of them are made with canned soups which use beef broth, I’ve got an out.
Still I LOVE green beans and we eat them a lot in our house, but I like to bring green beans to Thanksgiving dinner that are tasty, better for you, and aren’t mushy and swimming in soup. Here are the best recipes I could find on the net and I think I’ll be trying a new one this year. I hope these inspire you to think beyond the cans of soup and fried onions to something fresher.
